3 Sheeps Brewing Company Craft Beer Selection 2012 Really Cool Waterslides Style: IPA ABV: 6.2% IBUs: 120 OG: 1.062 Description: It’s all about choosing a dream. Once the decision was made to open a brewery, we knew there could be no more appropriate a name for our founding beer. We combined four hop varieties over a ninety-minute boil in six separate additions. The smooth malt profile lets the hops do the talking. It is complex and intricate, yet completely accessible--a labor of love to be shared with the world. Food pairings: Spicy foods Cheese pairings: Milder blue cheeses
Baaad Boy Style: Black Wheat ABV: 5.5% IBUs: 13.1 OG: 1.058 Description: Don’t be fooled: this is, in fact, a wheat beer. Beneath its rich, dark exterior and cascading head, you’ll ¬find a classic, un¬filtered wheat presentation fused with the smooth, roasty, chocolate-like characteristics of the dark wheat malt. With a ¬finish this unnervingly smooth, it will bring out the bad boy in all of us. Food pairings: Grilled salmon, roast pork and anything smoked Cheese pairings: Gouda or Gruyere
Enkel Biter Style: Abbey Single with a Bite ABV: 5.0% IBUs: 9.6 OG: 1.053 Description: “Enkel” is the traditional name for an Abbey Single brewed by the Trappist monks beginning in the twelfth century. This was a very low ABV beer that functioned as a safe, flavorful replacement to unsanitary water. We’ve taken that simple Enkel and added some bite. We upped the ABV and threw in some rye malt to spice up the back end, creating an easy drinking, everyday, beer. This is a brew worthy to be had after a hard day’s work. Food pairings: Burgers, pizza, wings Cheese pairings: Port-Salut or other tangy cheese
Cirque Du Wit Style: Wheat ABV: 4.2% IBUs: 11.8 OG: 1.043 Description: A wheat beer that showcases the wheat. We are firm believers that a person should taste the wheat when drinking a wheat beer and that is just what you get. To balance that great wheat flavor, we used Belgian yeast and Cascade hops to provide a nice sweetness on the front end. This yields an experience that starts fruity, finishes slightly dry and leaves you reaching for another sip. Food pairings: Lighter fares like salads, seafood, sushi and vegetable dishes Cheese pairings: Wisconsin cheddar
3 Sheeps Brewing Company Baaackgrounder History In 1926, the Pauly family purchased the bankrupt Gutsch Brewery of Manitowoc, Wisconsin as part of the Manitowoc Products portfolio of businesses. The family changed the brewery name to Kingsbury Breweries in 1933, expanded coast-to-coast and turned the brewing operation into a well recognized brewery that is still remembered today. Manitowoc Products operated the brewery for 30 years.
Three Generations of Brewers. Brewing is family tradition for third-generation brewer Grant Pauly, president, founder and master brewer of 3 Sheeps Brewing Co. Hearing family stories of the hardworking brewers and from customers at Sheboygan’s Rathskellers, Grant’s interest was piqued.
In 2006, thanks to a gift from his wife, Grant began brewing beer with a simple homebrewers kit. From that point forward there was no turning back. The hobby turned into a passion and then spiraled into an obsession that ultimately turned into a brewery.
The family knows a thing (or three) about brewing. In a town that knows a lot about beer, Grant turned his dream and made it a reality purchasing existing state-of-the-art brewery equipment in October 2011.
The 3 Sheeps Brewery…a Really Cool Waterslide. Grant owns a t-shirt that said: On your right: Money, Big Success, Fame, Fortune & Glory. On your left: Really Cool Waterslides. Grant turned left continuing the family tradition with distribution of 3 Sheeps Beer.
Namesake The 3 Sheeps Brewing Co. name pays tribute to the old drinking phrase “Three Sheets to the Wind” and the iconic grazing sheep of Wisconsin.
